Romaine Lettuce Wraps with Sweet Cherry Salsa

A fun, hand-held dish that’s light and flavorful — great for lunch or a simple appetizer.
Ingredients:
  • Leaves from 1 head romaine lettuce (Rising River Farm)
  • kept whole
  • ½ cup dark sweet cherries (Okanogan Producers)
  • pitted and chopped
  • 1–2 hakurei turnips
  • finely diced
  • 1 small carrot
  • finely diced
  • 1 Tbsp fresh dill
  • minced
  • Juice of ½ lime or lemon
  • Salt to taste
Directions:
  1. In a bowl
  2. mix chopped cherries
  3. turnips
  4. carrots
  5. dill
  6. lime juice
  7. and salt.
  8. Spoon the salsa mixture into romaine leaves like little boats.
  9. Serve immediately
  10. garnished with more dill if desired.
