Roasted Beet & Cherry Salad with Scallion Vinaigrette

Gluten Free, Vegetarian, Vegan

Ingredients:
  • 3–4 medium beets
  • scrubbed and cubed
  • 1 cup dark sweet cherries
  • pitted and halved
  • 2 scallions
  • minced
  • 2 tbsp olive oil
  • 1 tbsp vinegar (balsamic or apple cider)
  • Salt and pepper to taste
  • Optional: goat cheese or toasted walnuts
Directions:
  1. Preheat oven to 400°F. Toss beets with 1 tbsp olive oil
  2. salt
  3. and pepper. Roast 25–30 min until tender.
  4. Whisk together remaining olive oil
  5. vinegar
  6. and scallions for dressing.
  7. In a bowl
  8. combine roasted beets and fresh cherries. Drizzle with scallion vinaigrette.

Top with crumbled goat cheese or walnuts.
* Vegan option is without the goat cheese.
