Summer Greens & CherrY Salad with Cherry-Mint Vinaigrette

A vibrant celebration of summer, this fresh salad pairs tender greens with juicy, sweet cherries for a burst of seasonal flavor.
Ingredients:
  • 1 head green leaf lettuce (Kingfisher Farm)
  • torn into bite-sized pieces
  • 1 cup microgreens (Hope Grows Here Farm)
  • 2–3 hakurei turnips (Wobbly Cart Farm)
  • thinly sliced
  • ½ cup dark sweet cherries (Okanogan Producers Marketing Association)
  • pitted and halved
  • 1–2 garlic scapes (Rising River Farm)
  • finely chopped
  • A small handful of fresh mint leaves (Newaukum Valley Farm)
  • finely chopped
  • Cherry-Mint Vinaigrette:
  • ¼ cup dark sweet cherries
  • finely chopped or smashed
  • 1 Tbsp fresh mint
  • minced
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar or lemon juice
  • Salt and pepper to taste
Directions:
  1. In a large bowl
  2. combine green leaf lettuce
  3. microgreens
  4. sliced hakurei turnips
  5. cherries
  6. garlic scapes
  7. and chopped mint.
  8. In a small jar or bowl
  9. whisk together vinaigrette ingredients until well combined.
  10. Pour dressing over salad just before serving and toss gently to coat.
  11. Top with additional cherries or microgreens for garnish if desired.
