Stir-Fried Greens & Crunchy Salad Bowl

This vibrant bowl brings together the best of both worlds—warm, savory stir-fried greens and cool, crisp salad elements.
Ingredients:
  • For the stir fry:
  • 1 bunch rainbow chard
  • chopped
  • 1 bunch baby bok choy
  • chopped
  • 2 scallions
  • sliced
  • 2 cloves fresh garlic
  • minced
  • 1 tbsp olive oil or sesame oil
  • Salt & pepper to taste
  • For the crunchy salad:
  • 1 small kohlrabi
  • peeled and julienned (cut into short
  • thin strips)
  • 1 small purple daikon radish
  • peeled and julienned
  • 1 small fennel bulb
  • thinly sliced
  • Little Gem lettuce
  • chopped
  • Juice of ½ lemon or splash of vinegar
  • Olive oil
  • Salt to taste
Directions:
  1. In a large bowl
  2. combine kohlrabi
  3. radish
  4. fennel
  5. and chopped lettuce.
  6. Toss with lemon juice
  7. olive oil
  8. and salt. Set aside to let flavors meld.
  9. Heat oil in a pan over medium heat.
  10. Add garlic and scallions
  11. sauté for 1 min.
  12. Add chard and bok choy. Cook until wilted (3–4 minutes)
  13. season with salt and pepper.
  14. Spoon sautéed greens into a bowl and top or serve alongside the crunchy salad.

Add a fried egg, grilled tofu, or rice for a heartier meal.
